Prepare ashgourd
Make ready sugar
Make ready homemade cream
Take small eliachi/Cardamom
Take almonds and pistachios to sprinkle
Take ghee
Instructions to make Ashgourd halwa:
Wash the ashgourd. Remove the peel and the seeds. Then grate it.
Take a kadai and heat it. To this hot kadai add ghee.
Let the ghee heat. To it add small illaichi. Remove the cover of illaichi and pound it.
When it splutters add the grated ashgourd and stir it with spoon
Stir it continous, for about 5 minutes you will see it getting translucent. To this add the homemade cream and stir again for 5 minutes or so.
When you see both ashgourd cooking nicely with the ghee. You will sense a fragrance. That means it is cooking well.
Now add the sugar to the ashgourd halwa. Stir it continous again for 5 minutes.
Your gas should be on low heat for all this. Meanwhile take a cover and place it over your kadai. In 2 to 3 minutes you will see vapours. Remove the cover.
And stir your ashgourd halwa again for 2 to 3 minutes
Switch off the gas and remove the halwa. Decorate it with dryfruit.
