  1. Peel, cut and dice the sweet potatoes into small pieces. Deep fry it lightly (or you can boil till soft, but it looks better when fried) and keep aside
  2. In a pot, sauté chopped onions till soft. Add the blended tomatoes and peppers. Add seasoning. Simmer for 2 minutes stirring occasionally.
  3. Add the fried sweet potatoes, chopped green peppers and cucumber and stir. Cover pot and leave for 2 minutes or until done.
  4. Serve with jollof rice or macrooni. Enjoy 😋
