Soak rajma in water for 7-8 hours and then pressure cook it with salt, sodabicarb and enough water. Then strain water from it.
In a mixing bowl take boiled rajma. Add chopped onion, tomato, capsicum, coriander leaves, garlic paste and boiled american corn kernels. Combine them. Add salt, red chili powder, black pepper powder, chilli flakes, Mexican seasoning and tomato sauce. Mix well. Mexican stuffing is ready.
Now take khari biscuits, scoop with fork or thumb from top and make cavity. Do this gently.
Fill enough stuffing in each khari and spread cheese on top.
Bake into preheated oven for 5-7 minutes at 180°C. or until cheese melts. Garnish with corn kernels, chopped capsicum, tomato piece. Serve immediately and enjoy. (You can bake in kadai too).
