You may need a dash of olive oil to prevent sticking. Have ready a buttered baking dish (I used a cast-iron scone pan, see photo). I had a pie crust to use and some black beans, so came up with this recipe. Be sure to use the Mexican style fresh chorizo, not the Spanish smoked & cured variety.

  1. Place the crust in a round baking dish and dock it with a fork and prebake for 10 min to set

  4. Remove the crust from the oven and add the chorizo mixture top with mozzarella and the egg mixture.
  5. Place in the oven and bake at 180F for 35 min. The center should come out clean.
