The ingredients needed to make Vegetarian "Lazy Rice":
  1. Make ready 1 cup Jasmine/long grain rice
  2. Take 2 cup Water
  3. Take 1/4 cup Chopped cilantro (or as needed)
  4. Prepare 1 Egg
  5. Take Salt and Pepper

  1. Bring 2 cups of water to a boil
  2. Once at a boil add rice. Cover and let simmer for 10-12 minutes

  4. While the rice simmers crack and beat an egg, adding cilantro, pepper, and salt. Add milk (I used soy milk) and scramble
  5. Chop up the egg into fine bits and stir into the rice along with more salt and pepper. Add butter and stir.
  6. Serve immediately as a side or a dish
