Make ready 150 grams Salmon fillets
Take 1 tbsp White wine or sake
Get 250 ml Quinoa
Get 1 tbsp Olive oil
Get 1/4 Onion (large) (minced)
Get 1 clove Garlic (minced)
Get 7 Mushrooms (thinly sliced)
Take 3 bunches Spinach (roughly chopped)
Make ready 1 Salt
Make ready 1 dash Pepper
Steps to make Salmon & Spinach Quinoa (Gluten-Free):
Salt and pepper the salmon and sprinkle with white wine or sake.
Wash all the vegetables and cut.
Put the quinoa and 500 ml of water into a pot. Turn on the heat and bring to a boil.
Lay the salmon on top of the quinoa, cover and turn down the heat to low. Cook until the liquid is gone, for about 10-15 minutes.
While the quinoa is cooking, add olive oil to a frying pan. Heat the oil and add the onion and garlic. Stir-fry for around 2 minutes.
Then add the mushrooms and stir-fry. Finally, add the spinach and stir-fry until it wilts.
Adjust the seasoning with salt and pepper, and then turn off the heat.
When the quinoa is done cooking, remove it from heat. Discard the salmon skin. Flake the salmon flesh with a fork and mix into the quinoa.
Add the stir-fried vegetables to the quinoa and mix. Adjust the seasoning with salt and pepper.
