  1. Heat oven to 400°F. Cut carrots & onion and toss with 2 tbsp oil, herbs, salt & pepper.
  2. Roast for 30 min, stirring once.
  3. Meanwhile, heat quinoa with 1.25 cups water to boiling. Reduce heat and Simmer 16 min.
  4. Add chopped greens and cover for 5-10 min.
  5. Whisk miso, lemon juice & remaining olive oil. Add quinoa mixture.
  6. Divide into bowls, top with roasted veg and remaining dressing.
