  5. Make ready 3 shombo peppers(cut into small sizes)
  6. Make ready 1 large Onion bulb(chopped)
  7. Get 7 cups water
  8. Prepare 1 table spoon grounded crayfish
  9. Get 1/2 teaspoon grounded Ehuru or Okpei
  10. Take 1 knorr cube
  11. Take to taste Salt
Steps to make Mashed Fresh Corn Pottage:
  1. In a clean bowl, pour the fresh corn. Wash very well and remove any chaff. Cook with enough water until tender. Please, don't add salt while cooking corn until it's tender and well cooked
  2. Add salt, and allow it to simmer for 2 minutes again - Drain off the water - Place the cooked corn on your mortar, pound it coarsely. Keep aside.
  3. In a sauce pan, add your red oil. Heat it for 30 seconds. Add your chopped onion. Stir fry for 1 minute. Add your crayfish, knorr cube, Ehuru, sliced fresh Peppers, salt to taste and stir fry everything together for 3 minutes. Add your sliced Scent Leaves and smoked fish and mix everything together.
  4. In your Cooking pot, pour the already mashed corn. Add the fried mixture. Allow it to simmer for 3 minutes. Your mashed corn Pottage is ready.
  5. Serve and enjoy!
