  18. Make ready 1 tsp Coriander powder
  19. Make ready as required Cilantro for garnishing
  20. Prepare For Onion raita-
  21. Take 1 small onion chopped
  22. Prepare 500 gms yoghurt
  23. Take to taste Salt
  24. Get Dash black pepper powder
  25. Make ready as required Cilantro chopped
Instructions to make Aloo capsicum and stuffed parantha:
  1. For aloo capsicum, take oil in a pan, add cumin seeds to this.
  2. Then add diced potatoes and sprinkle over all the spices as mentioned above except mango powder. And add capsicum to it. Mix it well so that the spices are coated to the veggies properly.
  3. Cover it and let it cook for 15-20 minutes. Keep stirring occasionally.
  4. Check if the potatoes are soft, add the mango powder and chopped cilantro. And it is ready to be served!
  5. For aloo parantha, mash the boiled potatoes and add the spices and chopped coriander to this.
  6. Now make a ball out of the dough, roll it and then stuff it with mashed potato masala. Then roll it again, toss it from both sides with ghee on medium flame on a non stick pan.. and your parantha is ready to be served!
  7. For onion raita, add chopped onion to yoghurts and add the other spices to it. Mix it all well. And garnish with cilantro. It is ready to be served!
  8. Serve all this together in a plate. And your healthy lunch meal is ready!
