  2. Add basmati rice. Add salt. Stir well.

  4. After 20 minutes, check the consistency. If the rice is cooked and fluffy, then it is done. If it is a bit dry, add a bit of water and cover for 5 minutes or so.

I am always on the lookout for a better way to cook rice. It's not that rice doesn't come out nicely when I cook it, it's just that it always generates such a lot of clearing up! No matter how careful I am it always seems to boil over. In a large saucepan, saute zucchini and carrot in butter until crisp-tender. Add broth; bring to a boil.
