Mexican Rice is one of the most favored of recent trending foods in the world. It is enjoyed by millions daily. It’s easy, it’s quick, it tastes yummy. Mexican Rice is something which I’ve loved my whole life. They are nice and they look fantastic.

To begin with this recipe, we have to prepare a few components. You can cook mexican rice using 16 ingredients and 5 steps. Here is how you cook that.

The ingredients needed to make Mexican Rice:
  1. Make ready 2 tbsp oil
  2. Make ready 1 cup long grain/basmati rice, washed and rinsed
  3. Get 1/2 onion, finely chopped
  4. Make ready 1 cup tomato puree
  5. Take 1/2 capsicum, chopped
  6. Take 2 tbsp carrot, chopped
  7. Get 2 tbsp corn
  8. Prepare 2 tbsp peas
  9. Get 3 clove garlic, finely chopped
  10. Prepare 2 cup veg stock / water
  11. Take 1 tsp pepper, crushed
  12. Get 1 tsp ground cumin
  13. Prepare 1 tsp chilli flakes
  14. Get 1/2 tsp dried oregano
  15. Get 1/2 tsp salt
  16. Make ready 2 tbsp coriander, finely chopped
Steps to make Mexican Rice:
  1. Take 2 tbsp olive oil and roast 1 cup basmati rice. make sure to rinse basmati rice well and drain off the water.
  2. Roast on low flame for 5 minutes or till nutty aroma comes and rice turns golden brown. - now add ½ onion, ½ capsicum, 2 tbsp carrot, 2 tbsp corn, 2 tbsp peas and 3 clove garlic. - saute for 2 minutes, or till vegetables shrink slightly.
  3. Now add 2 cup veg stock or use water. - Also add tomato puree, crushed pepper, salt, cumin powder, chilli flakes, dried oregano and mix well.
  4. Get the water to a boil on high flame. - Now cover and simmer for 20 minutes or till rice is cooked completely. - After 20 minutes, stir the rice gently without breaking rice grains.
  5. Turn off the flame, cover and rest for 5 minutes before serving. - Finally, mexican rice recipe is ready to serve with lemon and coriander.
