Take potato & 1 cup cauliflower cut into medium to small pieces (equal quantity of potato and cauliflower)
Take tomato puree
Take chopped tomato
Get chopped green chillies

Take cumin seeds (jeera)
Prepare dry coriander powder
Make ready garam masala
Make ready turmeric
Get red chilli powder
Get dry mango powder optional (depends on sourness of tomatoes)

Instructions to make Aloo Gobhi masala recipe::
Deep fry potato and cauliflower till golden brown in hot oil.
Heat 2 tbsp oil in a pan or kadai and add hing, cumin seeds green chillies and ginger. Cook for half a minute on high flame.
Add turmeric, dry coriander powder and cook for another 30 seconds.
Add tomato puree and cook it with all the spices left (masalas) till it leaves oil.
Now add fried potato and cauliflower along with chopped tomato and coo it for 3-4 minutes.
Add a little water if sabzi looks dry.
