Hello everybody, it’s Drew, welcome to my recipe site. Today, we’re going to make a distinctive dish, chicken and rice. One of my favorites food recipes. For mine, I’m gonna make it a little bit unique. This is gonna smell and look delicious.

The ingredients needed to make Chicken and Rice:
  1. Make ready 2 bone in skin on chicken breast halves
  2. Take 1/4 cup flour (i used gf)
  3. Make ready 1/4 t paprika
  4. Get 1/2 t salt
  5. Prepare 1/8 t pepper
  6. Prepare 1.5 cups white rice
  7. Prepare 2 cups broth or stock (i had veg broth, chicken is better)
  8. Make ready 1 Tb tomato paste
  9. Make ready 1/2 t dried oregano
  10. Prepare 1.5 T olive oil
  11. Get 1 garlic clove, chopped
  12. Prepare 1 small onion, chopped
  13. Make ready Handful fresh parsley, chopped
Steps to make Chicken and Rice:
  1. Mix flour and seasonings, heat olive oil in large, deep Skillet (must have lid), dredge dried chicken pieces lightly in flour mixture, and fry chicken in oil several mins on each side till golden then remove from pan and set aside.
  2. Add rice to hot skillet and brown rice, this took me about 8 mins to get brown. Mix occasionally and scrape chicken bits from bottom of skillet into rice. After rice is browned, add in any finely diced veggies you wish. I usually don't add anything except garlic and onion, but i had carrot and bell pepper i decided to use this time and it made the photo pretty. Add onion and garlic and saute 2-3 minutes.
  3. Mix tomato paste, oregano and 1/2 t. salt into broth (my broth was unsalted, if you have salty broth Don't add more salt); add broth mixture to pan, mix and bring to boil, add chicken pieces to top of rice, cover, reduce heat to simmer, cook 20-25 mins. Don't overcook rice. Sprinkle with parsley if desired.
